Rainbow Veggie Omelets

What’s one of the best things about Saturday?  Is it finding your cell phone you have given up for dead hiding inside your Growth and Development binder after all hope was lost?  Well, yes.  Is it going to a wheelchair football game (pictures later!) to get some volunteer hours in?  Yes again.  But the other best thing about Saturday is how much time you have for breakfast.  Normally, I have class at 8:00 and I need at least hour after I wake up before I want to eat anything, so I drink a Carnation Instant Breakfast (I know, I know, too much sugar and not enough good stuff…but it’s the only thing I can get down so early)–but Saturdays.  Saturdays are a day of pancakes, waffles, eggs sunny side up and today: omelets.  Rainbow omelets, because I had piles of leftover produce in the fridge that we needed to use up.

Rainbow Veggie Omelets

  • 2 eggs per omelet
  • diced onion, mushroom, tomatoes, and any other vegetables you find in the fridge
  • chopped turkey
  • thinly sliced cheddar cheese

Dice all the veggies into evenly sized pieces.  Admire your rainbow.

Next, beat the eggs until they look light and fluffy.  I watched a show in which they suggested 80 times was the perfect number of times to beat an egg for omelets.  But don’t worry about that.  Also, if your husband is hanging over your shoulder eagerly awaiting breakfast, this would be a good job to distract him.

Next, saute the vegetables that you are planning on putting inside your omelet.  This is a big step for me because I only like omelets where the insides are cooked through, but I hate when the egg is burned on the outside.  So I do it in two steps!

Spray the pan lightly with canola oil, and allow it to heat over medium heat.  When the pan is hot, pour the eggs into the pan and allow it to start cooking through.

Spread the vegetables onto half of the egg.  Layer cheese on top–but be stingy because you already have so much flavor and you don’t want to drown it in the cheese.

Fold over and allow the egg to finish cooking and the cheese to melt.  Then eat it!

Fun times for everyone!

Fritz’s dad comes into the city tomorrow and we are going to dash in to see him for a few hours.  Well, we were going to dash–but they are doing work on the LIRR and the NYC marathon is tomorrow.  Needless to say, we are planning to leave several hours before we need to–but it’s worth it!  Hope your weekend is just as nice.
